You can make plenty without. Basic sponge recipe is flour, butter, eggs & sugar. (obviously butter can be swapped for margarine or whatever)
It's more the frosting that milk is needed, but even then its not really essential. standard buttercream is just butter and sugar..
However, tends to make everything nicer.
Especially hummingbird and their obsession with milk thats been infused with ginger or god knows what else their stupidly OTT recipes call for.

I need to do some baking

I need a recipe for making a toffee based cake. Thinking of a toffee sponge sandwich with a filling on top and then making a butterscotch icing for on top.

Chocolate Cupcakes

Bowl 1:
1 Cup Soy Milk
1 Teaspoon Apple Cider Vingar
3/4 Cup Granulated Sugar

Bowl 2:

Eat
Repeat eating

Not a cupcake recipe but just as easy and in my opinion far better for non-vegans:

Banana Chocolate Cake

6 1/2 oz (185g) plain flour
1 1/2 oz (45g) cocoa
1 tsp bicarbonate of soda
1 tsp baking powder
5 oz (140g) sugar
2 tbsp soya flour
1/4 pint (140 ml) vegetable oil
1/4 pint (140 ml) water
2 very ripe bananas, mashed (6oz/170g flesh)

1. Preheat oven to 160C/325F/gas mark 3.
2. Beat all the ingredients together and place in a 7 inch round cake tin, greased and floured.
3. Bake for 30-35 minutes in the pre-heated oven.

So, I've decided to start eating (responsibly sourced) fish again. I've not eaten fish for 13 years (and then it was pretty much just fish cakes, sardines on toast and occasionally salmon baked in foil parcels). Can anyone suggest some tasty things to start with? I like smoked fish especially from what I can remember.

I'm a big fan of mackerel, sustainable if line caught and which you can get smoked. Here's a tasty looking recipe for some smoked -

Finally you can't go wrong (fi the fish is fresh) with lightly seasoning mackerel fillets with flour, salt, pepper. Frying until just cooked and then serving in nice thick cut white bread with tartare sauce and nice salad on the side.

This is relevant to my interests. You should post more.

Best fish I cooked recently was whole seabass quickly baked with ginger, chilli and lime juice on some cavolo nero (a type of kale with a nice strong flavour). Absolutely banging. Also if you fancy something richer, Goan fish curry with hearty chunks of monkfish is wondrous.

I started eating seafood again last year. Like you, I hadn't ever really eaten fish even before I was vegetarian/vegan. Prepare to freak out when you go out to eat and actually have a decent range of stuff to choose from, rather than just one or two veggie options.

I've rarely used milk in sponge cakes. Only if the mixture is a little thick do I add a splash to loosen it up.

That sounds delicious. Definitely trying that next fish day (so far trying to just buy it one day a week on the days I'd normally just go for some rubbishy processed veggie thing). Last night I had oven cooked sea bass with a buerre blanc sauce. Was really yummy! I'm quite excited about trying new things and thus being able to experiment with more things in the kitchen (with the added bonus of being able to eat more things when in restaurants)

Is that a Nigella recipe? Someone made one when I worked at the council and it tasted amazing.

I've got a Nigella recipe and a hummingbird bakery recipe. I'm not sure what recipe the one I had was from as someone at work made it! It was fantastic though.

Not sick at all, chocolate and bacon is incredible! In fact almost any chocolate recipe will taste better with salt because it brings out the more subtle flavours of the chocolate. It's the same way Mole sauce is awesome :D

ive been a veggie since i was like 7 (...thats 22 years...how i am old enough to have been doing something that long!?!?!) and haven't eaten fish since then....but i've been thinking about giving it a go.
